We know the joy and satisfaction that comes from being able to process an animal and utilize all parts using traditional methods. This is knowledge that has been part of human history for all of time. We feel it's important to continue practicing these skills not just for the sake of self sufficiency, but to connect us to place and season and how to honor the resources that we steward.
